Lots of the Ski resorts keep one lift open during off season. Snowbird has the tram of course and its a blast to go to the top during the off season and follow the ski trails down. Most are relatively easy and you can end up finding some interesting and valuable things that have been lost by skiers during the season. Hiking the Wasatch is always great. I don’t know of any great parks per se in the area but there are dozens of places to hike and rock climb etc. Have fun.
